Baked Artichoke Dip

Glorious stuff, lighter on the dairy than most recipes. Serve with white corn chips or warmed Naan bread.

Baked Artichoke Dip
adapted from Bon Appetit
serves 2-4; 45 minutes to table

1/4 cup parmesan + 2 Tb
3 Tb mayo or veggenaise
3 Tb sour cream or greek yogurt
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp onion powder
1/8 tsp garlic powder
14 oz jar artichoke hearts, rinsed, well-drained, & chopped small

1/4 tsp paprika
1/4 cup shredded italian cheeses (or mozz)

1. Preheat oven to 375* and lightly grease a 2-cup ramekin or ceramic baking dish. Stir together first 8 ingredients in a bowl, then spread in the baking dish. Sprinkle remaining 2 Tb parmesan on top. Bake for 20 minutes.

2. Remove from oven, & turn on the broiler. Sprinkle dip with paprika and top with shredded cheese. Broil 2-3 minutes until golden and bubbly.
