Easy Asian Noodle Bowl

The pile of dishes will have to wait, because this dinner was so awesome I have to share it right away. The original author swears this is easy & you will have all the ingredients on-hand, but I sure didn’t. Now that I’ve acquired them all, though, I know this will be a frequent star in my dinner rotation.

Easy Asian Noodle Bowl

serves 2 | 20 minutes to table

1 bunch soba noodles (I used buckwheat soba; 2 servings of any pasta are fine)
1 Tb sesame oil or butter
1/4 yellow onion, finely diced
2 large cloves garlic, minced
1 Tb fresh ginger, minced
1/2 large red pepper, sliced thinly (or use 1 carrot julienned, or a bulb of baby bok choy, sliced)
2 tsp sesame seeds

for Hoisin sauce:

4 Tb soy sauce
2 Tb peanut butter
1 Tb honey or molasses or brown sugar (really, use molasses if you have it!)
2 tsp white vinegar
2 tsp sesame oil
1/8 tsp garlic powder
10-20 drops chinese hot sauce (sriracha, yes!), tabasco or habenero
1/8 tsp black pepper

1. Bring a pot of water to boil. Add the pasta & cook according to package directions. Drain and set aside.

2. In a small skillet over medium heat, add oil or butter, then onion, garlic and ginger. Cook until soft but not brown. Add sliced veggies and cook until soft, about 3 minutes.

3. Make the Hoisin sauce by stirring all ingredients together in a small bowl.

4. Add cooked pasta to skillet, then pour the sauce on top and stir it all up. Serve into two large bowls and sprinkle with sesame seeds.
