Grilled cheese sandwiches hold a special place in our hearts as a comforting remnant of childhood, but rarely do they get credit as viable grown-up fare. As a child, I had a mysterious aversion to cheese, but I am trying to make up for it in volume now. The classic yellow cheddar + white bread combo is still the uncontested companion to a steaming bowl of tomato soup, but a few simple additions can make grilled cheese a quick, filling, & respectable lunch for grown-ups too.

cheddar + sliced tomato + avocado
gouda + sliced pear
mozzarella + sliced apple
brie + roasted red peppers + turkey
swiss + cranberry sauce + turkey
havarti + mustard + ham
pb&j (trust me, it’s way better like this)
pb + banana
nutella + banana + mascarpone
raspberry jam + mascarpone
Notes: I consider grilled sandwiches interchangeable with quesadillas, and tortillas are an easy alternative to limit carbs or gluten. In early grilled sammy attempts, I tended to burn the outside before the cheese was fully melted. The trick is to cook it on medium low covered, so it gets warm in there & melts the cheese.
